Huso Dauricus

Kaluga Sturgeon

Huso Dauricus caviar comes from the Kaluga sturgeon, one of the largest freshwater fish species. With large pearls, grey to golden in colour, its caviar is renowned for its intense buttery and creamy notes, offering an immediately memorable and long-lasting finish. Due to its massive size and high-quality roe, it is often referred to as "River Beluga" and frequently compared to Beluga caviar.

Frequently asked

What does Huso Dauricus caviar taste like?

Expect balanced, almond and buttery, with large pearls, grey to golden in colour. It should read fresh and savoury, never "fishy" — the pearls pop and release a gentle brine.

Is Huso Dauricus caviar good for beginners?

Huso Dauricus is more distinctive, so it shines as the centrepiece. If it's your very first tin, a milder species like Siberian (Baerii) is an easier entry point.

How is Huso Dauricus different from Baerii?

Huso Dauricus brings balanced, almond and buttery, while Baerii leans light, pure, fresh, delicate. Pearl size and colour differ by species too, so it's worth tasting both to find your favourite.
