Avocado toast is already a reliable last-minute move. This version just goes a step further: warm brown butter basted over the avocado, and Kaluga Hybrid caviar spooned on top. It takes about 15 minutes, uses things most people already have, and looks like you planned it.
The technique matters here. Drizzling hot brown butter over mashed avocado softens its grassiness and brings out a richness that makes the caviar feel right at home rather than dropped on top as an afterthought. Kaluga Hybrid is the right call — its buttery, almond-forward flavour runs in the same direction as the brown butter instead of competing with it.
Serve it open-faced on a board if you have more than two people coming. It stretches easily: one more avocado, one more slice of bread. If you want a primer on species before you order, the Caviar Guide breaks down what each one tastes like and where it comes from.
Ingredients
- 2 thick sourdough slices — about 2 cm thick
- 1 large ripe avocado
- 2 tbsp unsalted butter
- a pinch flaky sea salt
- 1 tsp lemon juice
- a pinch chili or Aleppo pepper — optional
- about 20–30g Kaluga Hybrid caviar — to serve
Method
-
Toast the sourdough in a toaster or dry skillet until deep golden and firm enough to hold toppings.
-
While the bread toasts, halve and pit the avocado. Score the flesh in the skin, then scoop it out in rough chunks into a bowl. Add lemon juice, a pinch of flaky salt, and mash lightly — keep it a little chunky.
-
Melt butter in a small skillet over medium heat. Swirl it gently and cook until it smells nutty and the milk solids turn golden brown, about 2–3 minutes. Pull it off the heat.
-
Spoon the mashed avocado onto each toast. Drizzle the warm brown butter directly over the avocado so it pools slightly into the gaps.
-
Add a pinch of chili if using. Spoon the Kaluga Hybrid caviar on top just before serving — a small mother-of-pearl or plastic spoon works best.

Frequently asked
Why Kaluga Hybrid for this dish?
Kaluga Hybrid has a buttery, almond-forward flavour that pairs naturally with brown butter and rich avocado without getting lost. Its clean finish keeps the whole thing light.
Can I make this ahead if guests arrive soon?
Mash the avocado and brown the butter up to 20 minutes ahead, then keep both at room temperature. Toast the bread and assemble right before serving — caviar goes on last.
What makes caviar more or less expensive?
Price is driven by species, the years of farming required before harvest, and roe size and grade. Visit our shop for current figures on each tin.
