What is Kaluga Hybrid caviar?
Kaluga Hybrid is a farmed cross of the Kaluga sturgeon (Huso dauricus) and the Amur sturgeon (Acipenser schrenckii). It inherits the high-quality roe of the Kaluga and the faster maturation of the Amur, giving a balanced, buttery caviar with an almond flavour — medium-to-large pearls, dark grey to amber. Because it shares parents with two other species, the same roe can be described a few different ways.
Why do caviar names overlap?
Some sturgeon are crossbred. A Kaluga Hybrid carries genes from both Huso dauricus and Acipenser schrenckii, so all three names can point at related roe. The map on this page shows exactly which tin is which.
